Requirements for commercial kitchen equipment
New minimum requirements that come into force in 2024 contribute to energy efficiency. Those who switch to modern equipment also reduce their operating costs.
Cooktops, deep fryers and salamanders are to consume less electricity in the future. The Federal Council has adopted minimum energy efficiency requirements for these three electricity-intensive appliances.
Cooktops, deep fryers and open gratinating or holding ovens with strong top heat (salamanders) that do not comply with the requirements applicable as of January 1, 2024 may no longer be placed on the market, i.e. manufactured or imported, as of this date. The sale from Swiss stocks of appliances that do not comply with the new requirements is permitted until December 31, 2024 at the latest.
Scope and exceptions
Affected are new, electric hobs, deep fryers and salamanders for commercial use. Appliances purchased abroad and imported directly for a commercial kitchen must also comply with the requirements. Existing appliances and second-hand equipment, on the other hand, do not have to comply with the requirements.
The requirements apply only to mains-operated devices. This does not apply to fryers that are operated with gas but have an electrical connection - for example, for the control panel and for generating the ignition spark.
